Ingredients
228g cooked turkey
2 tbsp Cooks Chinese Hot and Spicy Concentrate
1 medium onion (sliced)
2 medium potatoes (large dice)
2 firm tomatoes
1 chicken stock cube
113g water
5g chopped coriander
5g chopped spring onions
3 tbsp peanut or vegetable oil
Cooking Method
Step 1
Heat oil in a pan and fry sliced onions until they start to caramelise.
Step 2
Add curry paste and cook for 5 minutes, adding water from time to time.
Step 3
Keep mixing to prevent curry paste sticking to the pan.
Step 4
Next add potatoes, tomatoes and water.
Step 5
When potatoes are nearly cooked, add the stock cube and the cooked turkey.
Step 6
Adjust seasoning if necessary.
Step 7
Last of all mix in chopped coriander and spring onions, cover pan and turn off heat.
Step 8
As turkey has already been cooked once it is advisable not to freeze any leftovers.
