2 tbsp honey
Juice of 1 lime
2 tsp agar agar powder or 15g strips(soaked in water)
2 drops food colouring (optional)
Any combination fresh fruit to make up a fruit salad
In a saucepan sprinkle the powdered agar agar in the water.
Bring to the boil and reduce heat, add honey, lime juice and food colouring stiring well.
If using agar strands, ensure all the strands have melted.
Remove from the heat and strain through muslin into a rinsed container, cling film and refrigerate.
Cut jelly into cubes and serve with fruit salad for a light, refreshing desert.
