Vegetarian Spring Rolls

Some supermarkets sell spring roll wrappers. If you cannot get hold of them use filo pastry instead. For a different flavour, replace spring onions with 10g of chopped coriander.

Pancakes

These pancakes are easy to make – they are cooked in pairs – and are often eaten with crispy or roast duck. In Northern China, where wheat is a staple crop, pancakes are often used to wrap meat and vegetables.

Yellow Bean Pork Stew

Ideally, you need a food processor to blitz the onions and garlic in this recipe. However, if you do not have one, chop up the onions and garlic finely. Serve with steaming, hot rice.

Tofu and Oyster Mushroom Stir-Fry

Tofu or bean curd is a good source of protein and ideal for vegetarians and vegans. Available in soft and firm textures, we suggest that the firmer variety be used for this recipe. Lightly season with salt and dust in cornflour before frying.

Sweet and Sour Prawn Stir-fry

Hot and Sour Soup

This soup is popular because it has so many different flavours – pepper hot, slightly sweet and savoury. Our version uses Wing Yip’s Spicy Szechuan Sauce.

Fish in Yellow Bean Sauce

Use any fish steaks you like for this dish. I used Swordfish steaks but cod, hoki or monkfish work just as well. Delicious served with hot white rice.
