454g cod steaks
1 Jar Wing Yip Yellow Bean Sauce
1 medium onion (sliced lengthways)
1 tsp minced ginger (or use fresh)
1 tsp minced garlic paste (or use fresh)
1 tsp Wing Yip Light Soya Sauce
2 red chillies (sliced)
3 Spring onions (3cm lengths)
100ml peanut or vegetable oil
7-10 sprigs coriander
Season fish with light soya sauce and pepper.
Heat oil in a flat bottomed pan or wok and fry fish on both sides. Drain and keep warm.
Spoon off the oil, keeping 2 Tbsp in the wok.
Fry sliced onions for 1 minute and then add minced garlic and ginger. When mixture starts to turn brown add the yellow bean sauce and white parts of spring onions and red chillies.
Cook for a further 2 minutes.
Lastly, add fish and green spring onion and toss gently ensuring fish is covered with sauce.
Mix in coriander before serving.
