340g beef steak (sirloin or fillet steak)
284g broccoli (cut into florets and blanched)
2 tsp minced ginger (or fresh)
75ml Wing Yip Oyster Sauce
2 tbsp peanut or vegetable oil
Cut beef thinly across the grain and season with light soya sauce, sesame oil and a little cornflour.
Clean and blanch broccoli florets.
Heat oil in a wok and fry minced ginger and broccoli.
Turn up heat and add beef in batches to seal meat.
Add Oyster sauce and broccoli and stir well.
If you prefer beef pink now is the time to turn off the heat.
Alternatively, continue cooking for another 2 minutes.
If using dried mushrooms, slice and add to the wok after the ginger. Add 2 Tbsp water, cover and cook for 3 minutes before adding broccoli.
