120g raw cashews
120g raw almonds
20g toasted sesame seeds
2 tbsp Wing Yip Sweet Chilli Sauce
1 tbsp 5 Spice powder
peanut or vegetable oil
First lightly toast sesame seeds by frying in a dry pan, stirring constantly. Remove and keep aside.
Heat wok and fry the cashews, walnuts and almonds separately on low heat, stirring continuously.
Drizzle a little oil in the pan when the nuts are half cooked and start to colour but remember to keep heat low to prevent burning.
When nuts are cooked return the walnuts, cashews and almonds to the wok and sprinkle with 5 spice powder. Remember 5 spice is quite pungent so use sparingly.
Drizzle sweet chilli sauce over the nuts and mix well. At this point turn off the heat and sprinkle toasted sesame seeds over the chilli glazed nuts and mix well.
Allow to cool before serving
