Used throughout Thailand, sweetcorn is a popular snack food. Quite often, vendors sell corn on the cob, cooked on their mobile grills. This recipe uses fish sauce but do leave this ingredient out if a vegetarian version is required.

Thai Spicy Meatballs

Minced pork is used a lot in Thai cooking. This one uses minced pork but feel free to substitute mince beef or chicken if preferred. The finely chopped beans add crunch so do try and include them. Serve as a snack or as an appetiser.

Pad Thai

Phad Thai (or Pad Thai) is a popular “street” food dish available all over Thailand, now enjoyed around the world. Do drizzle a little water in the wok while cooking the noodles as this dish is meant to be slightly moist.

Thai Spicy Sweet and Sour Fish (Sam Rod)

This is a refreshing dish with a combination of contrasting flavours. Sam Rod literally means spicy, sweet and sour (three tastes). Do replace whole fish with fish steaks if preferred. If fish such as cod is used, we suggest it be pan fried instead.

Hand Moulded Sushi

No need to roll up sushi when making this hand moulded version with tuna. When buying tuna it should be the freshest fish you can buy and of sushi quality. Eat immediately and discard any leftovers. Serve with Japanese soya sauce, which is slightly sweeter than Chinese soya sauce.

Udon Noodles with Tempura Prawns

Udon noodles are thick, slippery noodles made from wheat, oil and flour, often used in soup. In this recipe I recommend using instant dashi (soup stock made from seaweed and bonito flakes) for simplicity. The soft udon noodles and crunchy tempura prawns in this dish make for a delicious contrast of flavours and textures.

Sushi

Very much in vogue, sushi need not be a daunting meal to make. Use ingredients like avocado, cucumber, smoked salmon and tuna if you do not like the idea of raw fish. If the idea of rolling sushi does not appeal, just lay out the ingredients on a platter and place fillings on top.
