Thai Spicy Sweet and Sour Fish (Sam Rod)

This is a refreshing dish with a combination of contrasting flavours. Sam Rod literally means spicy, sweet and sour (three tastes). Do replace whole fish with fish steaks if preferred. If fish such as cod is used, we suggest it be pan fried instead.

Thai Spicy Pork Stir-fry

This is a relatively dry dish that is quick to prepare and cook and would make a good accompaniment to another curry. Please note that red curry paste is salty so do taste the food before adding salt or fish sauce. Although sweet Thai basil is used traditionally, normal basil is a good substitute.

Sweet Chilli Glazed Nuts

Use a mixture of nuts for this recipe – I used cashews, almonds, walnuts and sesame seeds – but do cook them separately before adding the sweet chilli sauce. Very moorish so prepare plenty.

Mock Pomegranate

Here we use an ingredient not normally found in Western desserts – water chestnuts. Unusual and delicious it is suitable for people on a gluten or lactose free diet. Treat coconut milk as you would fresh cream.

Sushi

Very much in vogue, sushi need not be a daunting meal to make. Use ingredients like avocado, cucumber, smoked salmon and tuna if you do not like the idea of raw fish. If the idea of rolling sushi does not appeal, just lay out the ingredients on a platter and place fillings on top.

Gado Gado

The best way to describe this dish is as a nicoise style salad. Simple to prepare, if you use a prepared satay sauce you can serve it either hot or cold. Satay sauce can at times, be a little concentrated so do water it down before serving.
