Crispy Seaweed with Toasted Sesame Seeds

Ingredients

229g spring greens

peanut or vegetable oil for frying

1 tbsp rough salt

1 tbsp sugar

1 tbsp toasted sesame seeds

Cooking Method

Step 1

Wash the spring greens and drip dry in a colander and then on kitchen paper.

Step 2

Remove the thick stems and finely shred the green leaves.

Step 3

Deep fry the spring greens in batches in hot oil for about 1 minute.

Step 4

Take care not to let it burn. Drain well and place in a large mixing bowl.

Step 5

Scatter sugar, salt and toasted sesame seeds and mix well.
