Ingredients
450g spare ribs (chop into bite size pieces)
2 slices of ginger
2 cloves of garlic (bruise whole clove with side of a knife)
salt and pepper to season
2 large bunches or 2 packets of watercress
1-1.5 ltr water
Cooking Method
Step 1
Rinse the bone fragments from the spare ribs and drain well.
Step 2
In a large pot bring 1 ltr of water to the boil. Add spare ribs and boil for 1 minute, this should bring the scum to the top of the pot. Remove from heat and discard the water.
Step 3
Add 1.5 ltr of cold water to the pot together with garlic and ginger. Bring quickly to the boil and then simmer for one hour, season to taste.
Step 4
Wash watercress and add to boiling stock just before serving
