Oyster sauce should be used sparingly in Chinese cooking. Used in moderation it adds wonderful flavour but too much can be over powering. This recipe uses breast meat but feel free to substitute thighs or a mixture of both.
In this recipe we use combination of three mushrooms – dried sliced Chinese mushroom, fresh button or chestnut mushroom and fresh oyster mushrooms. Do not use flat field mushrooms as the colour from the gills will transfer to the dish.

Tofu or bean curd is a good source of protein and ideal for vegetarians and vegans. Available in soft and firm textures, we suggest that the firmer variety be used for this recipe. Lightly season with salt and dust in cornflour before frying.
We have added sliced pineapple to our sweet and sour prawns to make this a special dish to be remembered. If preferred, replace prawns with chicken or pork. Remember to cut the meat into bite size pieces and season before lightly dusting in cornflour.
Fried red chillies in this dish adds a little heat. Leave out the chillies for a milder flavour.
Rice is an important part of a Chinese meal as it provides the ‘bulk’ necessary to a full meal. Ideally, use day old rice (remember to keep it refrigerated). If that is not possible, ensure the rice is cold.
