Oriental Prawn Cocktail

Quick and easy to prepare, this oriental twist of a classic starter will impress your guests. I have used large frozen prawns but feel free to use any size prawn available from your local supermarket or shop.

Spicy Seafood Salad

Owing to its proximity to the sea and lengthy coastlines, Thailand’s cuisine has an abundance of seafood dishes. For versatility we have used a frozen seafood medley easily available in many supermarkets. The dressing can be made in advance and refrigerated until required.

Sushi

Very much in vogue, sushi need not be a daunting meal to make. Use ingredients like avocado, cucumber, smoked salmon and tuna if you do not like the idea of raw fish. If the idea of rolling sushi does not appeal, just lay out the ingredients on a platter and place fillings on top.

Hand Moulded Sushi

No need to roll up sushi when making this hand moulded version with tuna. When buying tuna it should be the freshest fish you can buy and of sushi quality. Eat immediately and discard any leftovers. Serve with Japanese soya sauce, which is slightly sweeter than Chinese soya sauce.

Simple Green Salad

A light salad of mixed leaves tossed in light olive oil, balsamic vinegar and sprinkled with toasted sesame seeds. Do use the lightest olive oil you can get for this recipe extra virgin has too strong a flavour.

Oriental Chunky Salad

This unusual salad with its oriental dressing uses fresh pineapple, Chinese leaves, red onions, tomatoes, cucumber and spring onions. You may substitute fresh pineapple with tinned in natural juice.

This coleslaw is given an oriental twist. Light and refreshingly different, it is wonderful served as a base for ribs, steaks, fish or any grilled or barbecued food.
